Rocky Bread

It's called Rocky bread because our friend, Rocky, made it up.  It's delicious and fast and has worked for us 2/2 times, which is a record.

Mix 4 c. warm water with 1 1/2 tbsp each of salt, yeast and sugar.  Let stand for 10 minutes.

Add flour to bowl, mixing with hands until dough no longer sticks to side of bowl,(approximately 8-10 c of white flour).

Let rise 1 hour, until double in size, split evenly into 3 loaves and baste loaves generously with melted butter.

Bake at 450 for 18-20 minutes until golden.  Baste with butter again.  Eat.

Chocolate Oreo Ice Cream

This recipe makes 1½ qts.

2 cups half-and-half
1½ cups sugar
½ cup baking cocoa (we like Hershey’s Special Dark- it's so tasty)
1 teaspoon vanilla extract
2 cups heavy cream

1 row of oreos, broken into rough pieces

Combine half-and-half, sugar, cocoa and vanilla in a blender; process on low until smooth.
Stir in heavy cream.
Freeze in an ice cream freezer according to manufacturer's directions.
When it's almost done, add in the oreos

Spinach Mushroom Feta Quiche (crustless)



Gordon, Hal and I were fighting over the leftovers.

  • 8 oz. fresh mushrooms, sliced thinly
  • 1 clove of garlic, minced
  • 1 (10 oz.) box frozen spinach, defrosted and drained
  • 4 large eggs
  • 1 cup milk
  • 2 oz. feta cheese
  • ¼ cup grated parmesan
  • ½ cup shredded mozzarella
  • salt & pepper
Instructions
Preheat your oven to 350 degrees. 
In a skillet coated with non-stick spray, saute the mushrooms, garlic, a little salt and pepper on medium-high heat until they release all of their moisture and no more water remains on the bottom of the skillet (5-7 minutes).
Meanwhile, In a medium bowl whisk together the eggs until fairly smooth. Add the milk, parmesan, and another small sprinkle of salt and pepper. Whisk to combine.
Spray a pie dish with non-stick spray. Spread out the spinach on the bottom of the pie dish. 
Add the cooked mushrooms, then the crumbled feta.
Pour the egg/milk mixture into the pie dish over the spinach, mushrooms, and feta.
Sprinkle the shredded mozzarella cheese over top. Top with a bit more salt and pepper
Place the quiche into the preheated oven and bake until it is golden brown on top and the center is solid. This could take between 40-55 minutes.
